Lazarus is a special project where the winemakers at Alpha Box & Dice breathe new life into wine that would otherwise be discarded. Each vintage we collect portions from different 'letters' in the Alphabet of Wine and add it to the Lazarus master stock. This includes wine from all vintages and varieties, which we then revitalise by putting them over the skins of new wines. This is our take on the traditional idea of the Ripasso process, but in reverse. Conventionally, Ripasso is a technique where young wine washes over old skins to give old characters… We give old wine new life by washing it over freshly-pressed skins.
Barbera, Cabernet Sauvignon, Negroamaro, Shiraz, Mataro, Aglianico, Tmpranillo, Grenache and Dolcetto feature in this batch of Lazarus in decreasing volumes. All are sourced from South Australian vineyards, fermented separately using native yeasts and native malolactic fermentation. Each variety is pressed over the skins of Shiraz, Nero d'Avola and Carignan post fermentation. The resulting wine was then aged for six months in barrel.
