Styx Gully Chardonnay

History

Parcels of fruit were harvested from individually selected blocks in our Mount Barker vineyards. A mixture of clean and turbid juice was racked into a selection of new and aged oak from several separate cooperages for barrel fermentation. The barrels were monitored over the cool, 12 day fermentation to preserve delicate fruit flavours. The individual barrels were tasted prior to blending and only those that fitted the 'Styx Gully' style were selected.

Attractive pale straw

Bouquet

Quite subtle with a beautiful nuttiness. As a young wine it is showing fresh raw cashew nut characters with some delicate stone fruits; it will develop more toastiness with bottle age.

Palate

This is a modern Australian Chardonnay; it is well flavoured though still elegant with a beautiful creamy, 'seamless' palate. With light peach fruit flavours and hints of those cashew nuts, it is drinking beautifully already.

Food suggestions

Fish in sauce, crustacean and hard cheese.

Cellaring

Wonderfully drinking now, or cellaring for up to five years.
